GF Pumpkin Chocolate Chip Muffins

These healthy muffins are a gluten-free, lower sugar alternative to many sweets.

These pumpkin chocolate chip muffins are made with rolled oats, so they are dense, flavorful and easy to share.

GF Pumpkin Chocolate Chip Muffins

Makes about 20 smaller muffins or 12 large muffins


2 cups rolled oats

1 cup pureed pumpkin

2 eggs

¼ cup brown sugar

2 tbs molasses

¼ cup milk

1 tsp baking soda

1 tsp pumpkin pie spice

¼ tsp salt

1 tbs ground flax

1 tbs chia seed

Preheat oven to 350 degrees. Fill muffin cups with a heaping tablespoon of dough for smaller muffins or 2 tablespoons for large muffins. Bake for 15 minutes or until a toothpick comes out clean. Remove to a cooling rack. Enjoy!
